Blackberry Love: Easiest Blackberry Turnovers Ever

One August morning I packed up the kids and we walked to our favorite blackberry patch along the beach. Five-year-old Nicky grabbed a handful of them, and stuffed them into his mouth.
“Why are people starving in the world when they can eat blackberries for free?” he asked smacking his blue lips.
Quite a logical question I thought.
Blackberries are one of my favorite fruits—and picking them with the kids is one of our beloved summertime memories. You are outdoors, moving slow, foraging with the promise of a pie or a cobbler to drive you to fill that bowl. Does it get any better than that?
It is a bumper blackberry summer here in the Pacific Northwest, and here are some blackberry tips for serious pickers:
• Cut an opening in a plastic gallon jug on the opposite side of the handle, and thread a tie through the handle and around your waist for hands free pickingplastic4
• Bring pruners to cut the long prickly branches out of the way
• Once we brought a piece of plywood to lay down across the picked over berries in the front to reach the big juicy berries in the back

Easiest Blackberry Turnovers Ever

What you will need:
1 package pre-made pie dough thawed according to directions
around 2 cups blackberries
1/3 cup sugar
1 Tbsp white flour
butter

Pre-heat oven to 400 degrees. Combine the sugar, flour, and berries and toss together in a bowl. Lay the pie dough on a cookie sheet and spread the fruit within 2-3 inches from the edge. Next, add pieces of butter over the fruit. Fold the pie dough as far as you can over the berries (you won’t be able to cover all the fruit), and pinch the dough together where it folds. Bake until bubbly and golden brown, around 30 minutes. Serve with vanilla ice cream. Lots of it.
